Gluten Free Banana Bread
Banana bread along with many other dessert breads is a family staple at all holiday events. But once I was diagnosed with a gluten allergy, I would simply forgo the dessert bread table. Then a few years back I was sampling different gluten free products for the cafe I used to own and came across a pretty tasty gluten free banana bread. Alas there was hope. So I decided to give a shot at making my own dessert breads. It was trial and error for sure but I finally came up with a moist, tasty, fluffy, gluten free banana bread that EVERYONE (including gluten eaters) can enjoy!
Ingredients
2 cups Bob’s Red Mill Gluten Free baking flour
1 tsp baking soda
1/4 tsp salt
1/2 cup maple syrup
4-5 ripe bananas mashed
4 eggs
1 apple peeled, cored and pureed or 1/2 cup store-bought apple sauce
1 tsp water
1/3 cup coconut oil
1 tsp vanilla extract
Directions
Preheat the oven to 350 degrees
Puree apple with 1 tsp of water in a blender
Place the flour, baking soda and salt in a bowl and mix
in a separate bowl combine mashed bananas, maple syrup, eggs, pureed apple, oil, and vanilla extract
slowly mix in the dry ingredients and combine well. pour the dough into a greased 8”x4” bread loaf pan. Bake for 55-60 minutes.
Let cool for 10 minutes, then transfer to a rack.
Slice, spread some butter and ENJOY!
